整塊肉脂肪分佈均勻但又不像肉眼這麼豐富，油花介於牛柳跟肉眼中間，不過在頂部覆蓋著一層標誌性的脂肪，煎香後帶來無窮滋味，而肉質嫩度稍次於牛柳跟肉眼，比較有口感，肉的風味比牛柳跟肉眼更強。
