西京燒是日本京都地區的一道料理,是以西京漬醃魚肉後再直接燒的料理。
當中的醬汁以口感帶甜的白味噌為底,加入清酒或味醂稀釋拌勻,再把銀鱈魚放入其中醃漬至少一天入味,製成西京漬。
