和牛之所以矜貴,是因為品質控制特別嚴謹,飼料是草及蛋白質豐富的食物,以增加肉的纖維及令牛隻長肉。為了令牛肉質鬆嫩,還會替牛隻按摩及灌啤酒等,飼養2至3年,就培養出有名的和牛。和牛因應肉色深淺和脂肪分佈分A1至A5五級,最高級為A5.
